SweetNSour Garupa

Ingredients

1 medium size Garoupa Fish *Cut up and clean*

Marinate with:

Salt and pepper

1 large egg (white yolk)

Cornstarch

Preparation:

Rinse the fish and pat dry. Make several shallow diagonal cuts to the fish flesh. To marinate the fish, use your fingers to mix in the ingredients and lastly, add in the cornstarch.

Tips**: While preparing the fish, start by heating the oil. To deep fry the fish, make sure the oil is really hot before lowering the fish and it has to be completely immersed into the frying pan. The effect of this is that the fish becomes crispy and browned while the flesh is tender and moist. Cook until it is golden brown. Monitor the fish so that it is not over cooked. Please note that insufficient oil heating will cause the fish to stick to the frying pan.



Sauce

1. 1 Tbsp dried shrimps

2. 1 Tbsp Oyster Sauce

3. 3-4 cloves garlic, crushed

4. 1 Red Onion (Sliced)

5. 3 Tbsp chilly paste

6. 3 Tbsp chilly sauce

7. 4 Tbsp tomato sauce

8. 1 ½ Tbsp Vinegar

9. ¼ glass of canned pineapple syrup

10. Peeled fresh baby carrots, tomato (cut into cubes), pineapple cubes

11. Salt

12. 1 tablespoon cornstarch mixed with 3 tbsp water

13. Garnish using green onions or coriander

Preparation

Heat 3 tbsp of oil in a frying pan. Stir fry 1, 2 for about 30 seconds and add 3, 4 until aromatic. Add 5, 6, 7 and stir fry for 5 minutes. Add 8, 9 ~add water sufficiently. Add 10, 11. Add 12 stirring to thicken. Garnish with 13.
